30 Minute One Skillet Dinner
This quick and easy one-skillet Taco Skillet meal that can be made in 30 minutes or less with ground beef, beans, corn, salsa, rice, cheese, and cilantro. It’s full of all Mexican dishes and flavors in one taco skillet meal.
As a busy mom of 3 boys, there is a guarantee that on any given night we will have sports, or activities in the evenings. I need to prepare dinner quickly so I can get to our activities, or we are getting home late and a quick dinner is a must! Right now it is summertime, so many days we are at the pool and when we come home I have hungry tummies ready to eat so doing a quick and easy one skillet meal that is healthy for dinner is my go-to! What is best about this Mexican Skillet recipe is that it makes a ton, and I can also use it the next night for burritos. It is a two-for-one dinner special, saving you time and money!
Hispanic food is hands down my favorite type of food! I love all the flavors and spices common with Hispanic foods, such as cumin, chili powder, and cilantro, and did I mention cheese or sour cream? Delicious!
This simple quick dish requires minimum equipment. I love cooking this skillet dish in a cast iron like this one.
How to Make:
Ingredients:
Ground beef: I love to use organic grass-fed beef for added nutrients, but you can also just use regular ground beef, ground turkey, or ground chicken.
Veggies: Onion, corn (fresh, frozen, or canned), can of black beans
Spices: Taco Seasoning (packet or homemade recipe here)
Herbs: Cilantro
Grains: Rice (White, Jasmine or Brown Rice)
Extra: Cheese, Jar of Salsa
Step by Step Instructions:
Step 1: Heat your skillet and your oil. Remember to use a high-heat oil such as avocado if using a cast iron skillet.
Step 2: Dice your onion and pepper then put into your skillet with your ground beef. Cook until meat is browned, and onions are translucent.
Step 3: Add in your can of black beans that are drained and rinsed, along with the can of corn (drained), and your taco seasoning and tomato paste.
* Note- If you have picky eaters that don’t like black beans (just my kiddos?) you can blend them up and cook them into your ground beef (in step 2) to hide them better
Step 4: Pour in a jar of your favorite salsa (I usually use a mild salsa since my kids don’t love super spicy, but you can choose any salsa heat here)
Step 5: Pour in a cup of rice and top with a cup of water or broth (if using brown rice I would suggest the broth for added flavor)
Step 6: Cook until rice is cooked through about 15-18 minutes
Step 7: Top with shredded cheese and cilantro
Step 8: Serve on top of tortilla chips or you can put them inside a tortilla to make a delicious burrito.

- 1 Large Skillet
- Can Opener

Ingredients
- 1 lb ground beef
- 1 can of black beans
- 1 can or corn
- 1 pepper diced
- 1 onion diced
- 2 tbsp olive oil
- Taco seasoning
- 1 jar of salsa
- 1 TBSP Tomato Paste
- 1 cup of rice
- 1 cup of broth or water
- Salt and pepper
- 1 cup Shredded Cheese
- 1/2 cup Chopped Cilantro
Instructions
- Add 2 Tbsp of Olive Oil
- Salute onions and then Brown the meat with it.
- Add beans, corn and taco seasoning and tomato paste and mix
- Add jar of salsa
- Add rice and broth or water and cook for 15 mins until rice is cooked
- Top with shredded cheese
- Finish with chopped cilantro
